I realised later that I had cut the containers too low, as the soil will be push upwards to a higher level when the grass and roots grow, so the soil may spill out later.
The grass sprouted after 2.5 days, and this is how it looks like on the 3rd day (evening).

Every night, I have to tell Coco to be patient whenever she starts clamouring for cat grass.
